Why Don't They Water the Vines in Tuscany?

"Wait... it's 38°C /100°F. Why aren't they watering the vineyard?"

It's one of the questions I hear most often during summer wine tours.

Guests look across the rolling hills of Chianti Classico or Montalcino, see golden grass, dusty soils. There obviously hasn't been a decent rainfall for months and vines are growing under the scorching Tuscan sun, then they ask the obvious question:

"Surely they must irrigate?"

The answer surprises almost everyone.

For much of modern Italian wine history, routine irrigation was either prohibited, tightly restricted or simply not part of traditional viticulture in many of the country's great wine regions. Even today, although regulations have evolved in response to climate change, irrigation remains a surprisingly complex subject.

At first glance, it sounds almost cruel.

Why would anyone deliberately leave vines to fend for themselves during a Tuscan summer?

The answer has everything to do with one of the most important concepts in fine wine: balance.

Not balance in the glass.

Balance in the vineyard.


A Vine Is Not a Tomato Plant

Most of us think of plants in the same way.

If they're thirsty, we water them.

If it's hot, we water them even more.

But grapevines are different.

Unlike vegetables or many fruit trees, grapevines are remarkably well adapted to seasonal drought. Given the right soils and conditions, they can develop extensive root systems that explore far below the dry surface in search of moisture.

They learn to search for water rather than wait for it to arrive.

Given the right soils, vine roots don't simply spread across the surface. They travel deeper and deeper into the ground, following tiny pockets of moisture that remain long after the topsoil has dried.

Some roots may reach several metres below the surface.

That hidden root system is one of the reasons vineyards can appear perfectly healthy while the surrounding countryside turns golden during the Tuscan summer.



Why Less Water Can Mean Better Wine

This is where many people become confused.

Surely more water means healthier grapes?

Not necessarily.

Imagine two vines growing side by side.

One receives abundant water throughout summer. It responds enthusiastically: longer shoots, more leaves, vigorous growth and potentially larger berries.

The other receives enough water to remain healthy, but not enough to grow without restraint.

Which one makes better wine?

Surprisingly, it may be the second.

A vine that has always had unlimited water becomes comfortable. It produces vigorous shoots, abundant leaves and often larger grapes filled with more juice.

That sounds wonderful.

For a juice factory, perhaps.

For fine wine, not always.

Many of the compounds responsible for colour, aromas, tannins and flavour are concentrated in the grape skins.

All else being equal, larger berries can have a lower skin-to-juice ratio, potentially reducing the concentration of skin-derived compounds in the must.

By contrast, a vine that experiences moderate water stress naturally slows its vegetative growth and focuses its energy on ripening the fruit.

Notice the important word:

Moderate.

Winegrowers aren't trying to make vines suffer.

They're trying to keep them in balance.

Too little stress and the vine becomes overly vigorous.

Too much stress and photosynthesis slows, ripening stalls and both quality and yields can suffer.

Like so many things in wine, the goal is neither abundance nor deprivation.

It's harmony.


What Does This Have to Do with DOC and DOCG?

Italian wine regulations aren't only about grape varieties, ageing periods or alcohol levels.

They're also rooted in a philosophy.

At the heart of the DOC and DOCG system is the idea that a wine should remain connected to its place of origin — its grape varieties, growing conditions and traditional methods of production. And water is part of that equation.

The French call it terroir.

If vineyards receive unlimited irrigation every summer, the influence of rainfall, soil depth, local geology and seasonal variation becomes less pronounced.

For decades, many appellations therefore discouraged or prohibited routine irrigation, encouraging vines to rely primarily on natural rainfall.

The objective wasn't to make life difficult for growers.

It was to preserve authenticity.

Every vintage should tell the story of that particular growing season.

Some years cooler.

Some warmer.

Some generous.

Some challenging.

That's part of what makes fine wine fascinating.



But the Climate Is Changing

Of course, vineyards today face challenges that winegrowers of previous generations never imagined.

Summers across much of Italy have become hotter.

Heatwaves last longer.

Rainfall is often less predictable.

Periods of drought have become more frequent.

As a result, regulations have gradually evolved.

Today, many appellations permit what Italians call irrigazione di soccorso — literally “rescue irrigation". When drought threatens the health of the vine or the crop.

At the same time, growers are adapting in many other ways.

Some encourage deeper root systems from the moment a vineyard is planted.

Others sow cover crops between the rows to improve soil structure and water retention.

Canopy management has become increasingly important, protecting bunches from excessive sun exposure.

Researchers continue to select clones and rootstocks better adapted to warmer, drier conditions.

Growers are also paying much closer attention to soil. Increasing organic matter, reducing erosion and improving soil structure can help vineyards capture and retain precious winter and spring rainfall for longer.

Interestingly, cover crops aren't automatically beneficial in drought. Left growing too long, they can compete with vines for precious water — which is why growers carefully manage when they're cut or incorporated into the soil.

Old Vines Have a Secret Advantage

One of the reasons old vineyards are so highly prized has nothing to do with romance.

It's practical.

Given the right soils, a vine that has spent forty, fifty or even eighty years exploring the ground may have developed an extraordinary underground network of roots.

During dry years those roots can access water reserves far beyond the reach of younger vines.

Old vines aren't invincible.

But they often prove remarkably resilient.

It's another reminder that what happens below ground is just as important as what happens above it.


So if irrigation can save vines during drought, why not simply install it everywhere?

Because irrigation doesn't create water.

It moves it.

And as drought becomes more frequent, agriculture, towns, ecosystems and vineyards may all be competing for the same increasingly precious resource.

In reality, it's only one piece of a much larger puzzle.

Water is a limited resource.

Installing irrigation systems is expensive.

Many growers believe excessive irrigation changes the style and identity of their wines.

And in many prestigious wine regions, preserving the relationship between the vine and its environment remains a fundamental principle.

Great wine isn't produced by removing every challenge from the vineyard.

It's produced by helping the vine find the right balance between abundance and restraint.

The next time you drive through Tuscany in the middle of August, don't be surprised if you see vineyards thriving while the surrounding grass has already turned golden.

Ask your guide or winemaker:

"Do you irrigate your vineyards?"

You may be surprised that the answer isn't simply "yes" or "no."

Instead, it often opens a fascinating conversation about terroir, climate, tradition, changing regulations, and the delicate balancing act that goes into producing every bottle of fine wine.

Those vines aren't necessarily being neglected.

They're doing exactly what they have evolved to do.

Searching.

Adapting.

Responding to the landscape beneath them.

Sometimes resilience doesn't come from making life easier.

Sometimes it comes from learning to grow deeper roots.
