The winery:
Capezzana is the place name of the Renaissance villa owned by the Contini Bonacossi, a large family who personally runs the day to day operations from the B&B to the farming of olives and vines.
The wine:
Capezzana produces a few thousand bottles of this special Vin Santo Riserva every year. Trebbiano, Malvasia and San Colombano grapes are dried for 4-5 months on bamboo racks until the grapes resemble raisins. The fermentation and ageing happens in old chestnut barrels in the Vinsantaia room just under the roof, hot in the summer and cool in winter. Only after 6 years the wine is assembled and bottled. The Vin Santo of Capezzana always gets top rewards for being one of Italy's best dessert wines.
