Corzano & Paterno - winery in San Casciano

CHIANTI

Corzano & Paterno is the name of the two hills this farm extends over. The space gives reason to produce more than “just” excellent wines, but also great cheeses are made from around 700 sheep, and excellent olive oils even in monocultivar versions. The enlarged family is pretty much all involved in some aspect of the production and that's part of the charm. It’s completely organic certified and the strive is to make only products of true excellence. As to the wines, we're in the Chianti region and both the white, rose and Chianti are very clean and lovely wines. There's also a small production of Super Tuscans (one pure Sangiovese and the other a blend with Cabernet Sauvignon). The dairy makes fresh cheese every morning and many varieties of Pecorino are made throughout the year, but production is small and only the best restaurants in Florence will have them. In fact, it's hard to say if this farm is better renowned for the cheeses or the wines, but it's a close tie! Not to mention the reward winning olive oil!
