Simone has continued the legacy of his father, who served as a cellarmaster for various wineries around Montalcino. Cava d’Onice has evolved into a family endeavor and is currently managed entirely within the family, primarily by Simone and his wife Lucia. Situated high above the Orcia valley, just a short distance from the town walls of Montalcino, the winery has progressed from a small garage operation to a sophisticated boutique estate equipped with top-quality facilities for crafting premium Montalcino wines. Like many other wineries in Montalcino, the focus is on producing the iconic Brunello di Montalcino, along with Rosso di Montalcino and a delightful, refreshing rosé.
